weekend treats

Ok, so with my wisdom tooth out this week squishy food is on the menu for me and if I am cooking then it’s on the menu for everyone else too. This weekend’s naughty treat is one of my all time favourite desserts and yes, it involves chocolate.

It is such an easy dessert to make and with many different variations to choose from, I’ve decided to give Bill Granger’s a go….

Molten chocolate puddings….

This recipe only serves 2 and Bill describes it as a modern classic and one of the most romantic desserts because it is great for sharing. Or, in my opinion, you can just over indulge and have it all to yourself…mmmm, yummy!  Such wonderful comfort food.

50g butter, plus a little for greasing
50g dark chocolate, chopped
1 egg, plus 1 eggstra (!) egg yolk
1 ½ tbs caster sugar
1 tsp plain flour
cocoa powder for dusting

Preheat oven to 220°. Butter 2 x 250ml ovenproof ramekins and dust with cocoa powder shaking out any excess.

Melt the chocolate and butter together in a bowl over a pan of simmering water. While the chocolate is melting, with an electric whisk, beat the egg, egg yolk and sugar until pale and thick.

Pour the melted chocolate into the egg mixture. Sift the flour and gently fold in. Spoon into the ramekins and bake for 10 mins. Serve either in the ramekin or turned out onto serving plates. Dust with cocoa and serve with crème fraiche or vanilla ice cream.  I had mine with runny vanilla custard :  )  Enjoy!
