Butterfly cakes



Butterfly cakes

These remind me of my mum. She used to make them a lot when we were kids. And I loved them so much. I would wait in anticipation for the patty cakes to cool so she could turn them into magical yummy butterflies....an after school, afternoon treat!

So with another birthday on the cards yesterday, I decided they would be the 'cake' of choice. I don't have my mum's recipe, but I'm pretty sure this is as close as I will get to it.


Ingredients

  • 125g butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup milk
  • 2 cups of self raising flour
  • strawberry jam
  • whipped cream
  • icing sugar for dusting

Directions

  1. Cream butter and sugar together, add eggs one at a time, then vanilla, flour and milk alternatively. Pour into patty pans or muffin/ cupcake tin, lined with patty pan or cupcake papers if you like, and bake in a moderate oven (180 degrees) until cooked (about 20 mins). When cool cut a circle from the top of each cake, then cut the circle in half. Beat cream in a small bowl until thick. Put a teaspoon of jam into the top of each cake and top with a dollop of cream. Press two of the half circles onto each cake. Dust with icing sugar to serve.

Yum, just seeing them brings back happy memories. My mum would pop a bit of jelly in the centre of the cream. Hope the birthday celebrations are fun.

Thanks for the lovely comments too, on my bee pic. The plant it was on is just plain old rosemary! It had some flowers on it & the bees can't seem to get enough of it! So as well as being good on the lamb roast, it serves a purpose as being a border plant & attracting the bees to our vegie garden!

Oh yes, these are delightful Alison. Whoever thought up the idea to turn patty cakes into butterflies with cream in them deserves a medal! What a great invention :o) Such a lovely memory to have of them also. Ahhh the good things in life xo
